Stir Fry! (Blogmas Day 13)

Welcome to Blogmas day 13! Today I thought I would share my sister's super yum stir fry recipe! She made it with chicken, but you can use whatever you have or want.. It's a simple, quick and easy meal that is hearty and delicious. She typically makes enough for both of us to have for dinner and there is enough left over for lunch the next day. Okay, let's get started! You'll need a few things:


  • Chicken (we used 1 boneless, skinless breasts)
  • Stir fry mix (2 packets)
  • Carrots (we used a handful of baby carrots)
  • Celery (we used about 5 stalks)
  • Water chestnuts (1 can)
  • Broccoli (we used half of a small bunch)
  • Zucchini (1)
  • Baby corn (1 can)
  • Garlic (we used a couple table spoons, you can use as much or as little as desired)
  • Rice 

You'll want to wash all your veggies and then dice them up and set aside. 




Next you want to chop up the chicken into smaller pieces or cubes and add garlic to a hot pan to sauté for about a minute, then add the chicken and let it brown a little before adding in all your vegetables.



 Once everything is in the pan, stir it up and add about a quarter of a cup of water into the pan, cover it and let it simmer for about 30 minutes, or until the vegetables are tender. Stir occasionally. Add the stir fry mix according to the directions, then serve over your favorite rice and enjoy!
